Let us give you an example - the fish we serve.

At Amali, we buy fish from one of two sources.

First, Mavros, a Montauk fisherman who drives line caught, day boat fish to to us in the mornings (we share a partnership in his fishing boat).

Second, we visit the fish market late at night and Chef Borges and his team personally select the fish we serve here. This allows us to select the freshest product (instead of being at the mercy of a purveyor) as well as keep an eye (our own) on the market’s direction.
